Marinated Chicken Drumlets made with Colman’s Organic Coconut Aminos

Juicy, golden-brown drumlets marinated and glazed with the rich umami sweetness of Colman’s Organic Coconut Aminos — perfect as a party appetiser or weeknight treat.

Ingredients

  • 500 g chicken drumlets
  • 1 medium onion, chopped
  • 5–6 garlic cloves
  • 1 small knob of ginger
  • ½ green chilli (adjust to taste)
  • 1 Tbsp chopped coriander
  • 2 Tbsp Colman’s Organic Coconut Aminos
  • 1 tsp salt (adjust to taste — aminos add saltiness)
  • 1 tsp cornflour
  • 1 Tbsp oil (for frying)

Cooking Instructions

  1. Prepare the marinade
    Blend onion, garlic, ginger, chilli, coriander, salt, and Colman’s Organic Coconut Aminos into a smooth paste.
  2. Marinate the chicken
    Pour half the mixture over the drumlets, reserving the rest for glazing. Add cornflour, mix to coat evenly, and marinate for 1 hour (or overnight) in the fridge.
  3. Make the glaze
    In a small pan, heat the reserved marinade and let it bubble down to a thick, glossy sauce. Set aside.
  4. Cook the chicken
    Heat oil in a skillet over medium-high heat. Fry the drumlets for about 2 minutes per side without moving them to allow a nice char to form.
  5. Brush and finish
    Baste the cooked drumlets with the prepared glaze and let it caramelise slightly before removing from the pan.
  6. Serve Plate hot, drizzled with any extra glaze and garnished with a few coriander leaves.
